If “Everything’s better with bacon!” rings true then this bacon pâté for you. Bacon jam is a bacon-based relish, similar to the Austrian starter Verhackert. It all comes together when onions, shallots, garlic are caramelized then reduced with dark brown sugar, brewed coffee, herbs & spices, and the crispy bacon are cooked down to a deep chestnut brown a jam-like consistency. A few gentle pulses in the food processor and voila. Do have your favorite cracker, toast, or burger at the ready? It is even good on a tossed salad! Great for a gathering or a gift. I GUA-RAN-TEE.
